Marinated Mantoro

The only thing more crowd-pleasing than cheese? Marinated cheese. A young, semi-firm cheese like Reny Picot Mantoro works perfectly with the bright citrus notes and sweet cooked garlic in this simple, tapas-style recipe.

Ingredients

1 head of garlic, cloves separated and peeled

1 navel orange, quartered, thinly sliced, and deseeded

1/2 cup olive oil

1 tablespoon finely chopped rosemary

1 teaspoon finely chopped thyme

1 pound Reny Picot Mantoro, cut into 3/4-inch pieces

Instructions

  1. In a small saucepan, cook garlic, orange, and oil over medium heat, stirring occasionally, until garlic starts to turn golden, 10-15 minutes.
  2. Remove saucepan from heat and add rosemary and thyme. Season with salt and let cool.
  3. Once cool, pour mixture into a medium bowl, add Mantoro and gently toss to coat. Cover and chill at least 12 hours.
  4. Bring marinated Mantoro to room temperature before serving with bread.
